A brand new still red wine from this young star that is only available in miniscule quantities but we managed to pry them off Thibaud's hands! Fashioned after the lighter, more delicate and airy style of Pinot Noir from Jura, this Coteau Champenoise rouge was made from Pinot Noir grown on a south facing vineyard called "La Martinée".
 
Fermented in 300L oak barrels with 80% de-stemmed berries and 20% whole bunches before the final wine was laid to rest in the same barrels for 12 months prior to release. We found the wine juicy, crunchy, crisp and glouglou at the time of our tasting - a delicious drop that will go perfectly with some finger-licking good fried chicken. Cellaring time will likely allow this extremely young wine to evolve into something far more complex and layered, as the various elements in the bottle gain sufficient time to integrate fully.
